Banana Bread Cookies*
These
cookies are super soft and chewy, giving you that cozy banana bread vibe with a
sprinkle of cinnamon. They're a fun twist on the classic treat, making them
perfect for munching on or sharing with pals.
*What
You'll Need:*
- 1.5 cups
all-purpose flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup softened unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup mashed ripe bananas (about 1 big banana)
- 1 cup old-fashioned rolled oats
- 1/2 cup chopped walnuts (optional)
- 1/2 cup chocolate chips (optional)
*How to Make 'Em:*
1. Preheat your oven to 350°F (175°C) and line a baking
sheet with parchment paper.
2. In a medium bowl, mix the flour, baking soda, cinnamon,
and salt. Put it aside for now.
3. In a big bowl, beat together the softened butter,
granulated sugar, and brown sugar until it’s all light and fluffy.
4. Toss in the egg and vanilla, then mix in the mashed
banana until it’s all combined.
5. Gradually add the dry mix to the wet stuff, stirring
until it all comes together.
6. Fold in the oats, walnuts, and chocolate chips if you
want them.
7. Drop tablespoon-sized balls of dough onto the baking
sheet, leaving about 2 inches between them.
8. Bake for 10-12 minutes, or until the edges start to turn
a light golden brown. Let them cool on the baking sheet for a bit, then
transfer to a wire rack to cool off completely.
