2 cups panko breadcrumbs
(large breadcrumbs)
¼ cup grated parmesan
½ tsp garlic powder
2 eggs, beaten
4 breaded chicken cutlets
(schnitzel)
Salt and pepper
SALAD
1 tsp white wine vinegar
Juice of ½ lemon
2 tbsp extra virgin olive oil
3 cups arugula
1 large fleshy tomato,
diced
Salt and pepper
Grated parmesan, to garnish
Preparation: 1. Combine Panko breadcrumbs, Parmesan and garlic in a bowl.
2. Generously season the chicken cutlet with salt and pepper.
3. Dip the cutlet in the egg.
4. Roll the cutlet in the Panko mixture.
5. Put the cutlet on the grill.
6. Press the “Steaks / Chops” program button. Set the cooking time to
15 minutes to start the preparation.
7. While the cutlets are grilling, prepare the salad.
8. In a bowl, whisk the vinegar, lemon juice and olive oil with a pinch of salt
and pepper.
9. Add the arugula and dress with the vinaigrette.
10. Cover the cutlet with the diced tomato and the arugula salad.
11. Sprinkle everything with a little grated parmesan.
